For over million travelers annually, Hawaiʻi is synonymous with the ultimate vacation destination. However, this picturesque archipelago situated in the Pacific Ocean embodies far more than mere leisure pursuits. It serves as a revered homeland for Polynesians, whose cultural traditions have endured for centuries. The most conscientious hotel establishments throughout the state are those that promote these esteemed customs, presenting guests with the chance to cultivate a more profound and enduring bond with the land and its inhabitants.

Presented under the title A Wayfinder’s Journey, this exclusive sunset sailing experience occurs on a catamaran, hosted by the renowned Hawaiian navigator, Kala Baybayan Tanaka. Over the course of three hours, a maximum of six guests are captivated by her vivid storytelling, recounting her extensive explorations of the open ocean. Participants gain valuable knowledge regarding essential tools and insights vital for such challenging voyages. They also have the opportunity to apply some of these skills as numerous constellations appear in the expansive night sky, facilitating nighttime navigation.

I consider myself fortunate, as each dining experience and activity has been remarkable, complemented by splendid weather and breathtaking vistas of Maui Komohana.

“Whenever we set sail in the evening, we consistently encounter the Hawaiian voyaging canoe, Moʻokiha, stationed at Lahaina, which provides a unique experience for our guests,” remarks Baybayan Tanaka. “Observing a traditional Hawaiian voyaging canoe while leaving a harbor is indeed a rare occurrence.”

This remarkable experience is further complemented by cuisine and wine of Michelin quality, as one would expect from the Four Seasons. The culinary offerings during the dining service feature indigenous ingredients: fruits, vegetables, and seafood harvested from the stunning environment that envelops us. Wine director Aaron Wood-Snyderman is responsible for curating the perfect wine selections to accompany these exquisite dishes.

I consistently endeavor to align the wines and beverages with every element of the experience, he conveys to Forbes. Is the weather warm? Opt for refreshing white, sparkling, or rosé wines. Wine and beverage pairing stands out as one of my preferred methods for fostering memorable experiences.

He takes pleasure in introducing lesser-known varietals aboard the vessel. A consistent favorite is Chenin blanc from Huet Vouvray, which is not only enjoyable and aromatic but also tends to be undervalued. This particular wine possesses a notable backbone of minerality that onizes well with the saline air of the ocean.

He elaborates, Our salivary glands react to acidity, stimulating our appetite. This characteristic is essential when selecting an appropriate wine to accompany a meal. Additionally, it is imperative for a wine to have a remarkable finish.

An exceptional combination. It is not customary for us to taste both the food and wine simultaneously. My pairing considerations extend beyond simply the initial taste or mid-palate of the wine; I also take into account the finish. Is it prolonged? Is it intricate? Does it possess a sense of balance?

As the various courses are served throughout the evening, Baybayan Tanaka elucidates the particular combinations and how each one corresponds to her three distinct oceanic journeys between Hawaiʻi and Tahiti. “Throughout my travels in the Pacific, these indigenous ingredients have been consistently present, forming the foundation of some of the…
